Are my files uploaded to your servers?

No. Both files are read and compared in this tab. Nothing is sent anywhere.

Does it compare the visual layout, or just the words?

Just the words. This extracts each PDF's text content and diffs it. A change in font, color, spacing, or images with no wording difference won't show up here.

Does it matter if the documents have a different number of pages?

No. Text from each document is joined together first, so the diff still lines up correctly even if content reflows onto more or fewer pages.

Will it work on a scanned document?

Only if the PDF has a real text layer. A scanned image with no OCR'd text has nothing to extract or compare.

Does this work offline?

Yes, once the page has loaded.
